Hemp Pesarottu (Mung Bean Pancakes)

Six months of staying home is the only explanation I can offer for why a bag of hemp protein powder appeared in my grocery list and thence to my pantry. As I searched for ways to use this mystery powder all recipes seemed to require more ingredients and processes than I was willing to get into without any assurance that the result would be appealing enough to compare favorably to simply eating the powder and separately having the muffin or brownie or shake in its sans-hemp form.

I had not yet tasted the powder, which reportedly had a mildly nutty flavor. If for the sake of its celebrated omega-3s and protein I just had to eat it directly, so be it.

Well today as I heated the griddle to make pesarottus I thought, “what if …?” I stirred 1/4 cup of hemp protein powder into 1 cup of pesarottu batter. The batter was somewhat thick and this made it even thicker so I added some water, not more than 1/4 cup.

The pre-hemp pesarottus, made from this same batch of batter, were a bit on the salty side. The post-hemp pesarottus were bland by comparison. Other than that it did not much affect the taste. Any toppings or dips would cover up that difference. When I asked Ravi if he could taste any difference he said maybe it tasted a bit different but he could not pinpoint anything specific.

Well, if we consider 1/4 cup hemp powder in 1 cup batter yielded 4 pesarottus, then that is 1 TBS powder per pesarottu. Which gives us 3 grams protein and 1.5 grams fiber (in addition to what we get from the pesarottu).

I realize that I have not yet posted the basic recipe for pesarottus. A fallout of the overall reluctance to post recipes due to inability refusal to measure. Well, one of these days I will do it. Meanwhile, just soak mung beans overnight, blend into a smooth batter with some salt, cumin seed and ginger. Green chilis if you plan to use within 1-2 days. Otherwise just slice the green chilis along with onions and use them as toppings when making them – which you do just like pancakes. Please don’t ask me to post the instructions for making pancakes.
